Refreshing Kiwi Sorbet

I know it’s autumn already, and what am I thinking, making delicious frozen desserts in the cold?! Well, let me just say, desserts are good anytime. Just not in large quantities the night you’re cramming/studying for an exam. You’d/I’d pass out into a food coma.

I like sorbets because they are refreshing and they don’t use heavy cream. This means healthier, leaner, and it leaves you with a nice, soothing, aftertaste. For those of you new to the sorbet world, sorbet is an Italian frozen dessert made with the same idea as ice cream using only sugar, water, and fruit. The ingredients are usually minimal and sometimes a tad bit of alcohol is poured in with the syrup to give the sorbet a feeling of summer.


Mmmm! Refreshing and not overly sweet— it really brings out the texture and flavor of the kiwi.

Refreshing Kiwi Sorbet (Adapted from Desserts for Breakfast)

Ingredients:

  • 10-15 kiwis (peeled)
  • 3/4 cups sugar
  • 1 1/3 cups water
  • green food coloring (optional)

**Note: I only had 6 kiwis, so I cut the recipe in half and it made about 1/4 of a gallon of sorbet! Sugar and taste came out nice!



Recipe:

  1. Peel (I used a regular peeling knife) and cut kiwi into small chunks (similar to cubes). 
  2. Put the kiwis into a a food processor (or blender) and process/blend until you get a kiwi puree.
  3. Add sugar and water to the puree.
  4. I added 2 drops of neon green food coloring to the puree mix just in case because I did not know how light the sorbet would turn out.
  5. Chill kiwi-syrup puree in freezer for an hour or two.
  6. Pull chilled mixture out of the freezer and put into an ice cream maker. Follow the ice cream maker’s instructions for operation.
