Dulce de Leche Rice Pudding (attempt with pictures)
EDIT: I managed to make it work! Actually, it turns out the the dulce de leche dessert needs WAY more milk and needs to cook way longer. I don’t remember how much milk I put in, but I think it was at least 1 cup more. I also stood there for a long while stirring so it wouldn’t burn to the bottom of the pot. It was delicious and the rice was so perfectly cooked. I will have to make this again later and will post the recipe then.
So it’s the season for warm foods and desserts.. This is my 2nd attempt at dulce de leche rice pudding. In this version I seasoned it with cloves, vanilla, and Bailey’s. I topped it off with cinnamon whipped cream and a Noir Ferrer Roche chocolate. It was delicious, but even after constant stirring and whipping for an hour, the rice was still not cooked completely! (Note: incompletely cooked rice is one of my pet peeves) The recipe I used only called for 20-30 minutes of cooking, so you can see how frustrating that was. :P The first time I used Jasmine Rice (due to lack of Aborio rice) and the same thing happened.

Next time I will probably partially cook the rice before putting it into the dulce de leche mixture so that it can cook quicker. For that though, I’ll have to wait until January when Wascar returns from South America with cheap, cheap dulce de leche ;)
