Bok Choy and Lotus Root Tacos PLUS Couscous with Turkey Bacon
Finals time dinner. Lots of vegetables on this taco. Actually, it is vegetarian taco if you do not make the turkey bacon. This taco is very easy and quick to make. I’m not sure on the measurements of seasonings and ingredients because I only eyeballed, so there will only be pictures today!
This taco was made with lightly stir-fried bok choy with lotus roots. I sprinkled the bottom of the taco with freshly chopped tomatoes, filled with the bok choy and chopped lotus root, and topped with toasted pine nuts. On the side I have chopped turkey bacon.


I didn’t have enough taco shells, but I did have left over curry couscous…So, another concoction with the extra taco fillings!
